Spaghetti and Meatballs

Ingredients:

Meatballs Sauce
  • 1 cup plain bread crumbs
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 kg ground beef
  • 3 eggs
  • 1/4 cup fresh parsley, chopped fine
  • 1 1/2 Tbsp crushed garlic
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon chilli flakes
  • 1 teaspoon dried Italian herb seasoning
  • 2 Tbsp grated Parmesan
  • 2 x 400g tins chopped tomatoes
  • 1 Tbsp dried Basil
  • 1 tsp dried oregano
  • 2 bay leaves
  • 2 Tbsp tomato paste
  • 1 beef stock cube
  • 1/2 tsp chilli flakes
  • 1/2 cup red wine
  • 1/2 cup brown sugar

Method:

Sauce (Simmer on medium heat for 4 hours):
  1. Put all ingredients in a heavy bottom sauce pan
  2. Whisk to incorporate all ingredients
  3. Simmer on medium heat for 4 hours

 

Meatballs (Preheat oven to 200C):
  1. 1 hour before serving mix all ingredients together and leave covered for 40 minutes
  2. Cook pasta according to instructions on the package
  3. Line a large baking tray with baking paper and drizzle with olive oil
  4. Roll the mixture into 1 to 1.5 inch diameter meatballs and place on the tray
  5. Place in the preheated oven and cook for 15 minutes
  6. Turn all meatballs and cook for another 15 minutes
  7. Check they are cooked all the way through by breaking one in half (you can give this one to Connor)
  8. Serve on spaghetti with sauce and Parmesan
