Courgette and Feta Fritters
Method:
- 2 small-medium courgettes, grated
- 150g feta crumbed
- 10 – 12 mint leaves, chopped
- 1 egg, beaten
- 70g gluten free flour
- 1 tsp baking powder
- 2 tsp corn flour
- 1/2 tsp cumin
- 1/2 tsp salt
- 3-4 Tbsp olive oil
Ingredients:
- Squeeze excess fluid from courgette
- Mix courgette, feta and mint
- Add beaten egg
- Add dry ingredients slowly, combining well
- Shallow fry in oil
