Honey Prawns
Ingredients:
- 2 tsp oil
- 1.5kg prawns, peeled, deveined, tailed
- 1 bunch spring onions, chopped
- 2 tsp garlic
- 1 Tbps ginger
- 1 cup Bok Choy
- 1 red capsican, seeded, sliced
- 1/4 cup honey
- 2 Tbsp soy sauce
- 300g pad thai rice noodles
Method:
- Boil noodles according to packet.
- In a wok or large frying pan, heat oil on high. Stir-fry prawns in 3 batches for 3-4 minutes each until cooked through (colour will change). Set aside on a plate, covered, to keep warm.
- In the same wok, stir-fry spring onion, garlic and ginger for 2 – 3 minutes until onion is tender
- Return prawns to wok with bok choy, capsicum, honey and soy sauce. Stir fry for 2 – 3 minutes until hot and bok choy has just wilted.
- Stir through noodles and. Serve straight away.
