Honey Prawns

Ingredients:

  • 2 tsp oil
  • 1.5kg prawns, peeled, deveined, tailed
  • 1 bunch spring onions, chopped
  • 2 tsp garlic
  • 1 Tbps ginger
  • 1 cup Bok Choy
  • 1 red capsican, seeded, sliced
  • 1/4 cup honey
  • 2 Tbsp soy sauce
  • 300g pad thai rice noodles

Method:

  1. Boil noodles according to packet.
  2. In a wok or large frying pan, heat oil on high. Stir-fry prawns in 3 batches for 3-4 minutes each until cooked through (colour will change). Set aside on a plate, covered, to keep warm.
  3. In the same wok, stir-fry spring onion, garlic and ginger for 2 – 3 minutes until onion is tender
  4. Return prawns to wok with bok choy, capsicum, honey and soy sauce. Stir fry for 2 – 3 minutes until hot and bok choy has just wilted.
  5. Stir through noodles and. Serve straight away.
