Kumara Salad
Ingredients:
- 800g Kumara
- 2 Tbsp Oil
- 200g Bacon
- Salt and Pepper
- 2 Spring Onions
- 1 Garlic clove
- 1 Tbsp Brown Sugar
- 1/4 cup oil
- 2 Tbsp malt vinegar
Method:
Dressing
- Crush, peel and mash garlic, combine with 1/4 cup oil, vinegar and brown sugar.
- Shake well to mix.
Kumera
- Cut kumara into chunks and boil with skin. Simmer 10 – 12 mins till tender. Drain
- Place in oven dish and pour over 2 Tbsp oil. Cut bacon into 1/2 roll up.
- Place with Kumara, season and bake @ 200 for 20min.
- Scatter onions over salad. Pour dressing over while hot.
- Serve immediately
