Spicy Corn Fritters
Ingredients:
- 6 cans whole kernel corn
- 6 eggs
- 6 cups gluten free self raising flour
- 6 tsp ground cumin
- 3 tsp paprika
- 3 tsp oregano
- 3 tsp salt

- 2 cans whole kernel corn
- 2 eggs
- 2 cups gluten free self raising flour
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp salt
Method:
- Drain the corn reserving the liquid. Put the corn in a bowl with the eggs and mix with a fork
- Add about 1.5 cups corn liquid and the sifted dry ingredients and stir un dry ingredients are damp and the mixture is of batter like thickness. DO NOT OVER MIX
- Drop tablespoonfuls carefully into hot oil about 5mm deep, and fry until golden brown. (Tip: This is called shallow frying)
- Dry on paper towels and serve warm.
