Chicken Pot Pie

Ingredients:

  • 1.5kg Chicken, cubed
  • 2 Small Onions
  • 2 medium carrots, sliced
  • 1 1/2 tbsp flour
  • 1/3 white wine or water
  • 2 cups chicken stock
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1 bay leaf (optional)
  • 1/4 tsp pepper
  • 250g courgette, sliced
  • 750g potatoes, peeled, quartered
  • 3 tsp butter
  • 1/4 cup milk
  • 1/3 cup yoghurt
  • 1/8 tsp paprika

 

Method:

  1. Place potatoes on to boil with bay leaf
  2. Place the chicken in a large frying pan. Cook on medium heat for 5 min, turning often.
  3. Add the onions, and carrots, cover and cook for 10min
  4. Blend in the flour, then add the wine, chicken stock, sage, thyme, bay leaf and pepper.
  5. Cover and simmer for 20min
  6. Add courgette
  7. Add yogurt, stir through
  8. Mash Potatoes with milk, butter and paprika. Can add some yogurt for flavour
  9. Place chicken in a casserole dish and top with mash potatoes
  10. Bake in oven for 20min or until top is golden brown
