Chicken Pot Pie
Ingredients:
- 1.5kg Chicken, cubed
- 2 Small Onions
- 2 medium carrots, sliced
- 1 1/2 tbsp flour
- 1/3 white wine or water
- 2 cups chicken stock
- 1/2 tsp dried sage
- 1/2 tsp dried thyme
- 1 bay leaf (optional)
- 1/4 tsp pepper
- 250g courgette, sliced
- 750g potatoes, peeled, quartered
- 3 tsp butter
- 1/4 cup milk
- 1/3 cup yoghurt
- 1/8 tsp paprika
Method:
- Place potatoes on to boil with bay leaf
- Place the chicken in a large frying pan. Cook on medium heat for 5 min, turning often.
- Add the onions, and carrots, cover and cook for 10min
- Blend in the flour, then add the wine, chicken stock, sage, thyme, bay leaf and pepper.
- Cover and simmer for 20min
- Add courgette
- Add yogurt, stir through
- Mash Potatoes with milk, butter and paprika. Can add some yogurt for flavour
- Place chicken in a casserole dish and top with mash potatoes
- Bake in oven for 20min or until top is golden brown
