Guinness Steak and Cheese Pie
Ingredients:
- 6 red onions, diced
- 1kg mushrooms, sliced
- 6 carrots finely sliced
- 2kg of stewing steak
- 2 can Guinness beer
- 6 cups of grated cheese
- 2 heaped tbsp of flour
- Puff Pastry for top
Method:
- Preheat oven to 180C
- Fry onions in butter until soft
- Add carrots and mushrooms, fry until softened
- Add diced steak and fry until browned
- Add can of Guinness and simmer for 3 mins
- Add flour and stir until well combined
- Let simmer for 5 mins
- Salt and pepper to taste
- Transfer to oven dish and cover with tin foil
- Place in preheated oven and cook for 2 – 3 hours until meat is tender
- Remove tinfoil from dish and bake for another hour or until liquid has reduced to a robust pie filling. If liquid is not reducing add 1 tbsp of corn flour
- Remove thickened filling from oven and stir through 2 cups of cheese. Sprinkle remainder on top
- Add pastry to top of pie and brush with milk
- Slice a few hole in pastry to allow air to escape
- Bake for about 30 min or until pastry is golden
