Pulled Pork in a Crock Pot
Ingredients:
- 3 tbsp paprika
- 1 tsp salt
- 2 tsp pepper
- 1/2 tsp cayenne pepper
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 cup honey OR (1/2 cup water and 1 cups sugar mixed together until sugar has dissolved)
- 1/4 red wine vinegar
- 3 tbsp olive oil
- 1 onion
- 1.5kg pork shoulder, cut in two
- Coleslaw or salad to serve
- buns or wraps to serve
Method:
- In a medium bowl, mix together the first six ingredients (all the spices) with a fork
- Pour in the honey, vinegar, and olive oil and stir to form a paste
- Place the onion in the bottom of the slow cooker. Top it with the pork and then pour the honey paste over all sides of the pork pieces. Its okay if some of it drips to the bottom
- Turn the slow cooker on to low and cook for 7 – 8 hours, until meat is tender enough to be shredded with a fork
- Serve warm, in buns or just by it self.
