Sticky Chicken

Ingredients:

  • 2 tsp sesame oil
  • 1.5 tbsp water
  • 1.5 tbsp ginger
  • 2.5 tbsp lime juice
  • 2.5 tbsp fish sauce
  • 1/3 cup brown sugar
  • chilli to taste (optional)
  • 0.5kg chicken, sliced
  • 0.5kg stir fry veges


Ingredients:

  • 4 tsp sesame oil
  • 2.5 tbsp water
  • 2.5 tbsp ginger
  • 5.5 tbsp lime juice
  • 5.5 tbsp fish sauce
  • 2/3 cup brown sugar
  • chilli to taste (optional)
  • 1kg chicken, sliced
  • 0.5kg stir fry veges


Ingredients:

  • 6 tsp sesame oil
  • 4 tbsp water
  • 4 tbsp ginger
  • 8 tbsp lime juice
  • 8 tbsp fish sauce
  • 1 cup brown sugar
  • chilli to taste (optional)
  • 1.5kg chicken, sliced
  • 1kg stir fry veges

 

Method:

  1. Heat oil in large frying pan
  2. Add sesame oil, water, ginger, lime juice, fish sauce, brown sugar and chilli
  3. Stir until sugar has dissolved
  4. Add the chicken and veges; cook over medium heat, turning regularly, until sauce reduces and chicken becomes sticky – DO NOT OVER COOK, SHOULD BE STICKY, NOT BURNT
  5. Serve on rice or can be used a sushi filling
